'Acerb' describes something that is sour, bitter, or sharp in taste. It can also refer to a harsh or severe manner or expression. Unlike something sweet or mild, an acerb flavor is tart and biting. Think of the taste of an unripe lemon; it is notably acerb. It can also refer to someoneβs personality, like a brutally honest friend. It is similar to being tart, having a biting quality to it. It is the opposite of bland. Some strong cheeses can have an acerb flavor.
