Belgian endive is a small, tightly packed head of pale leaves with a slightly bitter taste. It's grown in the dark to prevent it from turning green and becoming too bitter. Think of it as the albino of the lettuce family, unique and delicate. It's often used in salads or as a vessel for appetizers. Belgian endive offers a mild, refreshing bite. The pale color is due to the lack of sunlight during its cultivation. It's basically the VIP of the salad bar.
