Corn whiskey is an American whiskey made from a mash bill of at least 80% corn. This high corn content gives it a sweet, almost grainy flavor. Unlike bourbon, it doesn't necessarily have to be aged in new, charred oak barrels. It can be aged in uncharred or used barrels, or even remain unaged. Think of it as the moonshine's slightly more refined cousin. It often has a lighter color and a more pronounced corn taste compared to bourbon. It's a more 'raw' and straightforward expression of American whiskey.
