Lutefisk is a traditional Nordic dish made from dried white fish (typically cod, ling, or burbot) treated with lye. Itβs then rehydrated to achieve a gelatinous texture. Think of it as fish thatβs been chemically altered and then brought back to life. Unlike most fish dishes, lutefisk has a very distinct and almost rubbery consistency. It's often served with butter, white sauce, or potatoes and is a common dish during the Christmas season in Norway, Sweden, and parts of the United States. The preparation process is quite unique and results in a very particular flavor and texture.
